RESUMO

BACKGROUND: Microbiological and chemical safety concerns regarding frozen fillets from pangasius catfish (Pangasius hypophthalmus) exported to Poland, Germany and Ukraine and Nile tilapia (Oreochromis niloticus) exported to Poland and Germany were investigated by analyzing heavy metal residues, microbiological hazards, biogenic amines, and thiobarbituric acid (TBA) and total volatile basic nitrogen (TVB-N) content. RESULTS: The heavy metal residues from all studied samples were far lower than the limits established by authorities. The most abundant biogenic amine found was histamine, with a maximum content of 9.6 mg 100 g(-1) , found in pangasius exported to Poland. The total viable counts were from 2.8 log cfu g(-1) in pangasius exported to Ukraine to 4.3 log cfu g(-1) in pangasius exported to Germany. Vibrio spp. were present in 70-80% of all studied pangasius groups, whereas there no Vibrio spp. were found in the studied tilapia samples. 30% of Pangasius fillets exported to Poland were contaminated with coagulase-positive staphylococci. No E. coli was found in any of the studied samples. Although the results of TBA analysis differed significantly between studied groups, the malonic aldehyde content in all studied groups was still very low. The TVB-N content in frozen fillets from pangasius was significantly lower than in frozen tilapia fillets. CONCLUSIONS: We reported that pangasius catfish frozen fillets were widely contaminated with Vibrio spp., which could prove hazardous for the final consumer if the fish is eaten raw or undercooked. The rest of the analysis showed no other reason for concern associated with Nile tilapia and Pangasius catfish frozen fillet consumption.

The aim of this research was to modify the Quick, Easy, Cheap, Effective, Rugged and Safe (QuEChERS) method for the determination of organochlorine and organophosphate pesticides in fatty animal matrices such as fish muscle tissues of carp and sturgeon collected from Carp Valley, Lesser Poland. Pesticides extraction effectiveness was evaluated at 0.030 mg kg(-1) spiking level and efficiency of the dispersive-solid-phase extraction (d-SPE) clean-up step was evaluated by comparison testing two different d-SPE clean-up stages, first the addition of the d-SPE sorbent combination (PSA + SAX + NH2), and secondly the addition of C18 after extracts enrichment with the d-SPE sorbent combination (PSA + SAX + NH2), introducing a novel concept of clean-up named dual-d-SPE clean-up. Analysis of pesticide residues was performed by Gas Chromatography Quadrupole Mass Spectrometry (GC/Q-MS) working in selected-ion monitoring (SIM) mode. Linear relation was observed from 0 to 200 ng mL(-1) and determination coefficient R(2) > 0.997 in all instances for all target analytes. Better recoveries and cleanliness of extracts in both samples, carp and sturgeon tissues, were obtained after C18 addition during the dual-d-SPE clean-up step. Recoveries were in the range 70-120%, with relative standard deviation lower than 10% at 0.030 mg kg(-1) spiking level for most pesticides. LODs ranged 0.001-0.003 mg kg(-1), while LOQs ranged 0.004-0.009 mg kg(-1). The proposed method was successfully applied analyzing pesticide residues in real carp and sturgeon muscle samples; detectable pesticide residues were observed, but in all of the cases contamination level was lower than the default maximum residue levels (MRLs) set by the European Union (EU), Regulation (EC) N 396/2005.

BACKGROUND: The artichoke (Cynara scolymus L.) is a perennial plant belonging to Asteraceae family. It is less popular vegetable in Poland but very valuable from nutritive and medicinal points of view plant. MATERIAL AND METHODS: The experiments were conducted in 2008 and 2009 on fi ve artichoke varieties: 'Deutscher Hybrid', 'Emerald F1', Green Globe', 'Gros Camus de Bretague' and 'Kerlouan', grew in Poland, France and Austria. The experimental material was assessed for: dry mass, protein, ash, vitamin C and dietary fiber contents and some mineral components (calcium, magnesium, phosphorus, potassium, sodium, iron, zinc) levels. Also the energy value and total carbohydrates content were calculated in the vegetable. RESULTS: Among assessed varieties, the highest contents of such components as: dry mass (total solids), carbohydrates, ash, vitamin C, sodium, potassium, magnesium, iron were found in 'Gros Camus de Bretague'. The hearts of that artichoke had also higher energy value than others, whereas the lowest ash, phosphorus, sodium, potassium and magnesium were noticed in 'Kerlouan' variety. But the highest values of dietary fiber was observed in that variety. CONCLUSIONS: Basing on performed assessments the differences in nutritive components and dietary fiber, between analysed vegetable varieties were found.
